Sustainability, served daily at our City Farm Cafe

We cook with care, for the land, our community and the future. Seasonal produce, reduced waste, and thoughtful choices are at the heart of our cafe.

 

We’re incredibly fortunate to run our cafe in such a beautiful setting, and with that privilege comes a strong sense of responsibility. Protecting the environment around us is something we take seriously, and we’re committed to doing everything possible to minimise our impact. That means making thoughtful choices about sourcing, minimising waste and single-use items, disposing of waste responsibly, and supporting our customers to make more sustainable choices too.

 

Sustainability isn’t an afterthought for us; it’s built into our strategy. We work to a clear sustainability strategy with measurable targets, and each month we bring together representatives from across the farm for the regular Operations Meetings to discuss. It’s a chance to share ideas, celebrate successes, and make small changes that, together, add up to meaningful progress. But what else do we do to ensure our cafe is as sustainable as possible? 

Reducing, Reusing and Recycling

 

We recycle where we can, covering everything from order tickets and hand towels to ice cream tubs, tetrapaks, cans, foil, bottles, jars and plastics – we also focus on re-use wherever possible. Bread delivery bags are repurposed as bin liners, punnets and egg boxes are reused for farm produce, and plastics that can’t be collected by our contractors are taken to our local supermarket for recycling.

We also operate a large on-site composting system, which helps nourish the soil that grows our produce. Plate leftovers are carefully monitored to ensure portion sizes are right, and any uneaten food is collected for anaerobic digestion rather than going to waste.

 

Changes that make a difference

 

Over time, these efforts have led to some significant improvements in the cafe, including:

  • Removing single-use takeaway cups and incentivising customers to bring reusable alternatives
  • Replacing single-use juice cartons and straws with bag-in-box juices or homemade milkshakes served in reusable cups.
  • Using as much organic and Fairtrade produce as possible, including fruit and vegetables grown right here on the farm
  • Encouraging fewer disposable wet wipes by offering washable cloth wipes instead
  • Reducing blue roll use through a system of colour-coded, washable cleaning cloths
  • Switching from herbal teas to loose-leaf, cutting down on paper sachets and packaging, while serving better-tasting tea
  • Serving only farm-reared meat on our menu, alongside plenty of delicious vegetarian, vegan and veg-forward dishes to inspire everyone to try something new

Looking ahead
 

Our approach to environmental sustainability is always evolving, and we welcome ideas and input from both our team and our customers. We’re proud to have been awarded three stars by the Sustainable Restaurant Association, whose framework helps us set clear goals and track our progress.

 

Our three-year Sustainability Strategy sets out the next steps on our journey, including:

  • Finding recycling solutions for plastics we can’t currently process
  • Closely monitoring and reducing food waste by separating prep waste, plate waste and spoilage
  • Tracking and reducing our water and energy use

We’ll continue to make thoughtful switches and substitutions that help protect the beautiful environment outside our windows – and beyond – now and for the future.
